Many thanks for that terrific link to the MSU Extension! I had no idea that peppers can be frozen–a great tip since they are inexpensive in season and pretty pricey when not. Our local farmers’ market always has numerous varieties available.

Yeah I didn’t know you didn’t have to blanch them. I went to this Remas Middle Eastern restaurant in Hamtramck on Saturday and they had this schug (Yemani sauce) that was AMAZING. Being able to just pull the diced peppers out of the freezer would be awesome & I feel like you could use a lot of different peppers instead of jalepeno.
